Also known as waxflower, Geraldton Wax is a stunning evergreen shrub, native to the southwestern regions of Australia. Traditionally used in flower arrangements, certain sub-species of the shrub are edible, and produce a fantastic floral kaffir lime leaf flavour and aroma when crushed. These tiny zesty needles pack a punch in any sweet or savoury creation. For brewing, infuse 1tsp per 250ml of boiling water, and steep for 10 minutes.

Infuse in Hot Liquids: Geraldton Wax leaves can be used to infuse hot liquids such as water, milk, or cream. For example, you can make Geraldton Wax tea by adding a few leaves to hot water.
Salsa Verde: Roughly chop Geraldton Wax and blend it with some oil and a pinch of salt, and your other favourite herbs to create a green salsa-verde to dress up fish, prawns or lamb.
Use in Baking: Geraldton Wax can be used as a citrus substitute in baking recipes. You can add finely chopped leaves or powdered dried leaves to cookies, cakes, muffins, and bread.
Spice Blends and Rubs: Incorporate dried Geraldton Wax leaves into spice blends and rubs for meats and vegetables. It pairs especially well with Asian herbs and spices.
Flavouring Sauces and Soups: Add dried Geraldton Wax leaves to sauces, soups, and stews. It can bring a lovely lime flavour to your dishes.
Dressings: Create salad dressings by infusing Geraldton Wax leaves into olive oil, vinegar, or other liquids. The leaves can add a unique depth of flavour.
Best used steeped in water to brew tea, or used in cooking.
Naturally dried Geraldton Wax is more mild in flavour in comparison to fresh or freeze-dried.
