(Acronychia acidula)

Also known as the white aspen, this stunning fruit of the Lemon Aspen tree is native to the tropic regions of eastern Australia. Described as the love child of an apple and a lemon, the pale yellow, spongey fruits have a core like an apple, and soft, edible skin. This exotic fruit boasts a complex flavour of tangy tropical lemon with subtle camphor notes- reminiscent of lemonade. Whether sliced fresh, cooked, pickled or minced, Lemon Aspen adds a special touch to any dish wherever conventional lemon is called for- but especially so in drinks! Rinse before use, and remove small seeds.
