Akoya are a sustainably harvested and certified carbon neutral aquaculture product. This stunning shellfish is grown in the pristine waters of Albany in Western Australia, and has a flavour reminiscent of clams, with the brininess and minerality of an oyster, and an underlying sweetness of a scallop. An extremely versatile product, Akoya are perfect cured, cooked, poached, fried or raw, and pair beautifully with a range of flavours.
