Another member of the spectacular Myrtle family, this evergreen tree is native to the coastal rainforests of eastern Australia. Cinnamon Myrtle is known for its aromatic leaves, which have a lovely cinnamon-nutmeg fragrance. When dried and milled, the sweet-cinnamon notes become more delicate, allowing the herbaceous qualities shine. Use this stunning native herb in place of bay leaves, cinnamon or nutmeg to flavour desserts, sauces, beverages, or even herbal teas. For brewing, infuse 1tsp per 250ml of boiling water, and steep for 10 minutes.
