Australian limes are revered as some of the finest amongst the world. Finger Lime, also known as caviar lime, is certainly no exception. Indigenous to the tropical regions of eastern Australia, this exquisite fruit boasts a vibrant spectrum of colours, ranging from red, pink, green, yellow, to white. Renowned for its elongated, finger-like shape, this exotic citrus is filled with tiny, caviar-like vesicles that add a crunchy and tangy citrus burst, which is more tart in flavour than conventional limes. To extract the pearls, defrost the fruit, cut the lime in half and squeeze like a tube. Rinse before use.

Rinse before use. Thaw frozen fruit between 1-5 degrees Celsius, and store refrigerated. Consume within 3-4 days.
