Also known as the white aspen, the stunning fruit of the Lemon Aspen tree is native to the tropic regions of eastern Australia. When freeze-dried and milled to a powder, it produces a delicate tropical lemon and camphor flavour, reminiscent of lemon sherbet. Works well wherever conventional lemon is used- especially when dissolved into liquids, dusted over desserts, or combined into spice blends and marinades.
