Renowned for its unique and intensely floral lemon-scented leaves, the lovely Lemon Myrtle is one of the most sought after native ingredients. This stunning evergreen shrub thrives along the coastal rainforests of eastern Australia where it originates from, however it is now grown widely across the country. When crushed or milled, the aromatic leaves release a flavour reminiscent of lemon, lime, and lemongrass, and provide a uniquely Australian touch to any recipe where conventional lemon is called for. Start with a small amount and adjust to taste, as the flavour can be quite potent.
