Buffalo Massaman Curry – NT Wild Caught – Wild water buffalo from Arnhem land flood plains are caught by local Aboriginals in the dry season. Truly “organic” dark red meat – quite similar to beef. Eye Fillets are moisture-infused and portion controlled. Year round harvest, generally only frozen stocks available. Slow sous vide cooked, perfectly tender/moist – fantastic Thai flavours with Anise Myrtle – gently simmer in the bag or pot to heat – add herbs/lime to finish.
