Our superb “modern” dampers are inspired by the age-old damper bread cooked in hot campfire ash by First Nations Australians for millennia – who were perhaps the first bakers on earth! Simply mix with a can of beer (or water) to make a fantastic campfire-style Aussie damper.
Aboriginal people have long used Saltbush to add flavour to their damper. This addictive mix of “Old Man” Saltbush and cheddar is blended to create a salty, earthy, and deliciously savoury Aussie damper that’s best enjoyed hot with lashings of butter.

For extra ‘outback’ flavour, pour damper batter into hot ash (not live large coals) on the side of the campfire, cover with more hot ash, sand, and smaller coals. Cook until crusty and “hollow sounding” when tapped. Brush the ash off the hot loaf with gum leaves.
1. Preheat your oven to 220ºC at home, or have plenty of coals in the campfire.
2. Add the damper mix and a can (375ml) of beer or water to a bowl.
3. Mix well (1-2 minutes) with a wooden spoon. Do not over-work the mix.
4. Pour into a greased baking tin or hot camp oven. Bake for 20-30 minutes until golden brown and crusty. The bread will sound “hollow” when tapped.
