Derived from the Rosella tree, which occurs naturally along the tropical north of Australia, the visually striking calyx is a prized native fruit. Often referred to native hibiscus, the crimson coloured fleshy calyx boasts a complex flavour profile akin to tangy rhubarb and berries, and makes for great plate presentation. Whether eaten fresh, cooked, or candied, Rosella can amplify the flavours of any sweet or savoury dish- wherever conventional rhubarb or berries are called for. Rinse before use.

Garnish: Simply wash and eat fresh, or use it as a garnish for meats, drinks, salads, or desserts. Rosella makes for a great cocktail or champagne garnish!
Jams and Relishes: Make Rosella jam or relish by cooking with sugar, pectin and your favourite ingredients. Spread on bread, use as a paste on a cheese platter, or serve alongside meats.
Marinades: Combine Rosella with chilli, garlic and spices to create a flavourful harissa marinade for roast chicken, or vegetables.
Infuse in Hot Liquids: Dried Rosella calyx leaves can be used to infuse hot liquids such as water, milk, or cream. For example, you can make Rosella tea by adding a few leaves to hot water.
Baking and Cooking: Rosella can be used in various baked goods, like pies, tarts, and muffins. Simply slice or chop them and incorporate them into your recipes.
Rinse before use. Thaw frozen fruit between 1-5 degrees Celsius, and store refrigerated. Consume within 3-4 days.
The fruit can be used sliced fresh, pickled, or cooked.
In sweet applications, use sugar to cut the acidity.
