Occurring naturally around the south east of Australia, Native Thyme is a powerful aromatic, and exceptionally versatile. When its petite leaves are crushed or milled, they release a bold flavour and aroma of thyme, mint and menthol. This distinctive herb is best applied in Mediterranean dishes- wherever conventional thyme is used, however it also offers a delightful contrast when paired with sweet flavours such as honey. Start with a small amount and adjust to taste, as the flavours can be quite intense.
