Coastal Rosemary, scientifically known as Olearia axillaris, is a popular evergreen shrub native to the coastal regions of eastern Australia. When the leaves are crushed, they emit a pleasant, subtle fragrance often described as a mix of rosemary, sage and lavender. Flavour-wise, this distinct herb boasts a delightful buttery rosemary and sage flavour, with a slightly bitter finish. Adds a unique depth to all types of savoury dishes.

Herb Butter: Mix finely chopped Coastal Rosemary into softened butter, along with a bit of minced garlic, lemon zest, and salt. This herb butter is perfect for spreading on bread, using to baste grilled meats, or melting over roasted vegetables.
Seasoning and Marinades: Finely chop Coastal Rosemary leaves and mix them with olive oil, garlic, lemon juice, and salt to create a flavourful marinade for chicken, lamb, or fish.
Roasted Vegetables: Toss vegetables like potatoes, sweet potatoes, carrots, and parsnips with olive oil, chopped rosemary, and some salt and pepper before roasting them. The Coastal Rosemary adds a delightful buttery sage and rosemary flavour to the dish.
Grilled Meats: Sprinkle Coastal Rosemary over meats like pork, beef, or chicken before grilling. It imparts a wonderful smoky and aromatic flavour to the meat.
Soups and Stews: Add some Coastal Rosemary to your favourite soups and stews. Remember to remove the woody stem before serving. Coastal Rosemary pairs well with tomato-based soups and bean stews.
