This uniquely Australian Christmas pudding features an array of native ingredients: the hero, of course, is the “wild or desert peach” – the quandong, along with rich and creamy macadamia nuts, and “Judas the Dark”, a wonderful ale from the Woolshed Brewery in SA, made with roasted Wattleseed, lending a nutty coffee flavour to the roast malt. These native flavours marry with an indulgent orange brandy sauce.

No recipe required – just cook and enjoy! Once cooked, serve immediately with lashings of custard, cream or icecreams!
OPTION 1: Open the lid to break the seal, and place pudding bowl in the microwave (lid on). Heat on medium high for 3-4mins., allow to rest for 5mins. Heat for another 2-3mins. (approx., as microwaves vary tremendously in strength – test the temperature with a metal skewer or thermometer). Rest again a few mins.
OPTION 2: Place pudding bowl into small saucepan (with tight fitting lid) and pour in hot water 2/3 up the side of the bowl. Cover and simmer VERY SLOWLY for 1 hour. Turn off and leave covered for another 15mins.
SERVING: Remove plastic lid and place over an upturned serving plate or wide bowl. Holding the two together, flip quickly so you can invert the pudding, then remove the bowl to reveal the ‘magic’. Serve immediately with lashings of custard, cream or icecreams!
Once cooked store refrigerated between 1-5 degrees Celsius, and consume within 2-3 days.
