Derived from the Acacia coriacea tree, this elusive species is known as the king of Wattleseed for its exquisite colour, flavour and aroma, and it also happens to be the largest edible Wattleseed. Desert Oak, like many Wattleseeds when roast and ground, produces a lovely nutty flavour, complemented by subtle notes of coffee. It really comes to life when used whole however—whether roasted, malted, or gently simmered—it unveils an astonishing spectrum of tastes: from burnt caramel, to bold espresso, and earthy, grainy richness. It also brings incredible texture and nutrition to breads, salads, soups, and slow-cooked stews. Note, Wattleseed cannot be eaten raw, it must first be cooked before consumption.
