Our superb “modern” dampers are inspired by the age-old damper bread cooked in hot campfire ash by First Nations Australians for millennia – who were perhaps the first bakers on earth! Simply mix with a can of beer (or water) to make a fantastic campfire-style Aussie damper.
For centuries, Wattleseed has been an important staple in traditional Aboriginal food. This Wattleseed damper has lovely savoury, nutty coffee notes, that is best served freshly baked with lashings of butter, and for those who like it sweeter- add some golden syrup or honey! For savoury lovers, use your Wattleseed damper to mop up stews or gravy by the campfire.

For extra ‘outback’ flavour, pour damper batter into hot ash (not live large coals) on the side of the campfire, cover with more hot ash, sand, and smaller coals. Cook until crusty and “hollow sounding” when tapped. Brush the ash off the hot loaf with gum leaves.
1. Preheat your oven to 220ºC at home, or have plenty of coals in the campfire.
2. Add the damper mix and a can (375ml) of beer or water to a bowl.
3. Mix well (1-2 minutes) with a wooden spoon. Do not over-work the mix.
4. Pour into a greased baking tin or hot camp oven. Bake for 20-30 minutes until golden brown and crusty. The bread will sound “hollow” when tapped.
