(Araucaria bidwillii) Are large nuts from the famous bunya pine, which is endemic to certain rainforests of Queensland. The nuts can be eaten raw, pureed or ground into a flour, but is best when simmered to soften. Bunya Nuts have a texture similar to a floury chestnut, with a nutty, sweet, almost potato flavour that works well in both sweet and savoury dishes. *De-shelled*
